Somehow, perhaps fortunately, it has escaped my attention until now that June is National Candy Month. More appropriately for Weight Watchers members, it is National Fresh Fruit and Vegetable Month as well as National Dairy Month.

June 25th is National Strawberry Parfait Day. Make it with fresh strawberries, Splenda, and Golden Spoon and you’ve covered a dairy and a fruit in your Good Health Guidelines!

Note: There is (to my knowledge) no truth to the story of the student who saved money by living on ramen noodles for his entire four years at college, only to die of malnutrition the week before graduation. Nonetheless I do not recommend it.

Skate can be cut into nuggets and prepared like scallops.

Keta salmon is another name for chum salmon. They are lighter in color and have a milder flavor and flakier texture than sockeye or coho salmon.

Notes: I have been informed, but cannot personally attest, that the muddy flavor of carp can be eliminated by skinning it and removing the large bones. Nopales, when peeled and cut up, add an okra-like flavor and texture to soups and casseroles.
