Week beginning April 28th

Welcome – as of Saturday – to May, which is (among many other things) National Asparagus Month, National Egg Month, National Gazpacho Aficionados Month, National Salad Month, National Salsa Month, and National Strawberry Month. The first week of May is National Herb Week, which goes well with the eggs, the salads, the asparagus, and of course the gazpacho and the salsa, and National Raisin Week.

May 4th, next Tuesday, is National Orange Juice Day and National Homebrew Day. The day after that, one week from today, is Cinco de Mayo, so we can fully expect anything that can be even tangentially connected to that day to be heavily promoted and possibly priced well.

Sunday, the 25th, is National Zucchini Bread Day: a low-fat zucchini bread that is two Points per slice can be found here. Bargain guide, week beginning April 7th

And fully twenty-four hours overdue I finally get the thing posted. But it does have the Fry's information!

This second week in April is National Egg Salad Week: at the end of this posting I include a 2-Points-per-serving egg salad recipe. It is also National Garden Week. If you don’t have a garden this year, grow some cress on damp paper towels. Monday, the 12th, is National Licorice Day for those who enjoy licorice. For the rest of us too, I suppose.

2 hard-cooked eggs, coarsely chopped
6 hard-cooked egg whites, coarsely chopped
1/2 cup chopped celery
1/3 cup chopped green onions
1/3 cup chopped red bell peppers
2 tablespoon light mayonnaise
2 tablespoons non-fat sour cream
1 teaspoon Dijon-style mustard
Salt and pepper to taste
