Bargain guide, week beginning April 7th

And fully twenty-four hours overdue I finally get the thing posted. But it does have the Fry's information!

This second week in April is National Egg Salad Week: at the end of this posting I include a 2-Points-per-serving egg salad recipe. It is also National Garden Week. If you don’t have a garden this year, grow some cress on damp paper towels. Monday, the 12th, is National Licorice Day for those who enjoy licorice. For the rest of us too, I suppose.

Tomorrow is Milk In Glass Bottles Day – the sale of milk in glass bottles began in 1879. The average life-span of a milk bottle was 22.5 round trips (dairy to consumer to dairy), which is more use than we usually get out of a modern plastic jug.

Two-Point egg salad!

(Truth in advertising: I have not myself tried this recipe.)

2 hard-cooked eggs, coarsely chopped
6 hard-cooked egg whites, coarsely chopped
1/2 cup chopped celery
1/3 cup chopped green onions
1/3 cup chopped red bell peppers
2 tablespoon light mayonnaise
2 tablespoons non-fat sour cream
1 teaspoon Dijon-style mustard
Salt and pepper to taste

Makes 6 servings, 2 Points per serving – entire recipe is 11 Points.
