From Fooducate.com: Denmark has instituted the world’s first tax on fatty foods! Effective immediately, all foods with a saturated fat content of 2.3% or higher will be taxed at a rate of 8¢ per ounce. Discuss! Good? Bad? (Denmark’s obesity rate is only 10%: in the US it’s 30%). Fooducate also has – clickable at the blog – an excellent history of food and nutrition labeling in the US. Did you know that the first standards for packaged-food content weren’t passed until 1939? And they only applied to canned tomatoes and tomato paste?

At Chow.com there’s a good video on how to roast vegetables. The trick is to spread them out, oil them (there’s a way to work in one of your healthy oils), and get the oven HOT: “anything lower than 500 degrees Fahrenheit is baking, not roasting.” And appropriately, at Summer Tomato there’s an article about roasting delicata squash!

Bargain guide, week beginning September 28th

At recent meetings we’ve discussed the issue of whole grains in processed foods, and of the distinction to be made between something “made from whole grains” and something “made with whole grains”. At Fooducate.com there’s a piece on the preposterous notion of “Multi-Grain Pringles”. Top ingredient: refined rice flour, followed by fat, potatoes, and corn flour. Barley flour and wheat bran are relegated to the “Contains 2% or less of” section. Multi-Grain Pringles contain more triglycerol mono-oleate than they do barley or wheat bran. I don’t even know what that is.

Also at Fooducate, a recipe for “baked oatmeal” that looks tasty for breakfast and is (says right here!) only a PointsPlus count of 4 for one serving!

Speaking of breakfasts, Chow.com has a good selection of “easy hot breakfasts in 15 minutes”. Some are more WW-friendly than others – I don’t know that the grilled cream cheese and jam sandwich would be my first choice, although it sounds tasty – but topping a whole-grain English muffin with peanut butter (or any other nut butter), slicing a banana onto it, sprinkling it with brown sugar and slipping it under the broiler for three minutes doesn’t sound too bad: protein, fruit, and whole grain all right there.

Tomorrow is the 29th, Michaelmas: it’s said that whoever eats goose on Michaelmas Day will never be short of money. There is a certain logic to this, as anyone who can afford goose is likely to be, ahem, financially secure.

Bargain guide, week beginning September 21st

Chow.com has a nice selection of recipes for homemade energy bars! At Summer Tomato there’s a posting on learning to like foods you don’t like. And from Atlantic magazine there’s a chart showing exactly what the “average American” eats in a year. For a start, the av.Am. consumes 31.4 pounds of cheese, 600 pounds of dairy products not in cheese form, 415 lbs of vegetables (of which 56 lbs is corn), 110 lbs of red meat, 85 lbs (that is not a typo!) of fats and oils, and 24 lbs of “coffee, cocoa, and nuts”. That includes – every year – 29 pounds of French fries, 23 pounds of pizza, 24 pounds of ice-cream, and 0.2 pounds of caffeine.

From Consumerist: Olive Garden and Red Lobster are planning to cut fat and sodium in their meals by 10% over the next five years. They’re also going to make veggies rather than potato the default side dish on kids’ meals.

And the Food and Drug Administration are nagging the Corn Refiners’ Association about the current attempt to rebrand high-fructose corn syrup as “corn sugar”. Turns out there’s already something called “corn sugar”. It’s more commonly called “dextrose”.

Bargain guide, week beginning September 14th

Chow.com, once again plumbing the baffling depths of “Why on earth would you do that?”, has a short video on how to make a Spanish egg dish out of “leftover potato chips”. More appealing, they’ve got a collection of “hot and spicy” recipes – including how to pickle your own peppers without the help of Peter Piper – and a page on how to make your own granola without oats. And the answer to the always interesting question, do you burn more calories eating celery than you take in? (No. Chewing expends only about five calories per hour. That said, it’s not easy to gain weight eating celery.)

And at Summer Tomato, there’s an excellent posting on “non-exercise activity”, or “how to burn more calories without breaking a sweat”:
Unlike structured, high-intensity exercise, walking and other low-intensity movements don’t make you hungrier. There’s good evidence that increasing your daily activity can burn hundreds of extra calories each day and may be one of the most effective ways to impact your energy balance (i.e. burn more without eating more). Importantly, non-exercise activity correlates with body weight in obese as well as normal weight individuals, so everyone can benefit from extra movement.

Bargain guide, week beginning September 7th

Chow.com has a number of good articles: one on “healthy snack ideas for kids’ lunchboxes” that might also provide ideas for grownups’ snacks as well, and one on how to brew your own beer. There is also one at which I have not even glanced, with the unfortunate title: “Eating the Placenta: Tastes like squab!” NO NO NO NO NO NO NO.

The Fooducate app for iPhone and iPod touch is available here. At their blog, Fooducate has a recipe for homemade hummus, and what I can only describe as a rant about how food nutrition labels should be changed. Top priority: Please do SOMETHING about “Servings per container: 2.5”!

The day after tomorrow is National Steak au Poivre Day: it’s very easy to make but a mortar helps. Bargain guide, week beginning August 31st

A couple of interesting articles at Fooducate.com: one exploring whether milk is inherently “good for you” or “bad for you” (filmmaker Shira Lane has made a film, Got the Facts on Milk?, in which she argues that it’s inherently bad and disease-causing for everyone – but then Lane’s opinions may be influenced by her own milk allergy), the other with the blunt title “Bummer – Weight Loss is Not Linear”.

Chow.com has a video on how to make a striped omelet – they do not explain why one would make a striped omelet – and an analysis of the currently popular phenomenon of fast-food oatmeal. It’s healthyyyyyy. Especially with (in the case of Starbucks Perfect Oatmeal with Brown Sugar, Fruit and Nut Medley) that two-and-a-half tablespoons of sugar.

Today was National Eat Outdoors Day. In a place where we’re on our eighth consecutive day of an “excessive heat warning”, this might appropriately be renamed National Are You —ing Kidding Me Day.

Labor Day weekend is, of course, the official end of Barbecue Season. There follows a month’s hiatus before the beginning of Chocolate Season, on October 1st. Any Barbecue Season holiday means heavy promotions on any food that can be cooked on a grill. I am trying to figure out just what foodstuffs are not included in that category other than pudding and possibly cream of wheat.

In anticipation of October, Jelly Belly has introduced a candy-corn-flavored jelly bean.

Bargain guide for the week beginning August 24th and how to sprout lentils

At Chow.com there’s an article on home canning: at Serious Eats, a recipe for a homemade ketchup made out of blueberries rather than tomatoes.

At Fooducate is an informative article on Greek yogurt, how it differs from ordinary yogurt, and why it’s become so popular recently. My only plea is that package designers will not render the word as “GRΣΣK”, which would be pronounced “grssk”.

Also at Fooducate, a new theory about causes of the childhood obesity crisis: kids in public elementary schools get, on average, about a 25-minute lunch break. That’s 25 minutes to use the restroom, wash up (one hopes), get to the cafeteria, stand in line for their meals, eat, and get outdoors for what few minutes of play they can manage. The nutritional “lessons” learned here are a) gulp down your food as fast as you can, and b) grab the things that taste good and eat them first, because if you save your favorites for last you may not have time to eat them.

Whiskey Sour Day is either tomorrow or next Monday: my sources disagree, as they do on National Waffle Day, which is either today or tomorrow. (International Waffle Day is in March. They do this just to annoy me, I know it.) Monday, the 29th, is definitely both National Lemon Juice Day and National More-Herbs-Less-Salt Day: whatever you’re cooking, squirt some lemon juice in there when you add the herbs. It’s tasty and better for you than salt. And one week from today, the 31st, is National Eat Outside Day, so bag up your lunch and find a shady spot.

Since I brought up the issue of lentil sprouts last week, here is how to go about it. This works for mung or other small beans as well, or alfalfa or wheat-berries. I’ve never tried it with millet or quinoa:

First pick the lentils over, at least make a token effort. Use brown lentils, not red.

Take a quart jar and pour in an inch or so of lentils. Fasten a piece of gauzy or meshy cloth across the top: old nylon stockings used to be popular, but if this offends your aesthetic sensibilities get some nylon netting (it’s very cheap in any fabric store). Secure it with a rubber band.

Rinse the lentils thoroughly, pouring the water off. The last time, leave it in, enough to cover them by two or three inches. Leave on the kitchen counter. Rinse them again two or three times a day.

The second day they will have swelled up quite a lot. Rinse again, but pour the water off this time and leave the jar lying on its side. Keep rinsing at least twice a day.

By the fourth day little tips of roots and leaf-shoots should be showing. If they’re not, throw them out, make the rest of the lentils into soup, and next time buy lentils from Sprouts or Whole Foods or Trader Joe or the co-op.

As soon as the tips start to show, they are ready to eat. They need to be cooked: steam them or sauté them. Take out half of the jar’s contents, it will refill itself by the next day.

They are good in scrambled eggs, in soup or stew, or any place you’d use chopped veggies.

If the jar refills too fast, put it in the refrigerator. If the contents start to smell even slightly funky, dispose and start over again.

They are good until they’re two inches long. After that toss them onto the compost pile and they will grow.
